Immune Supporting Butternut Squash and Chickpea Thai Massaman Curry
This year, it's incredibly important to do everything you can to maintain a healthy immune system during the winter months. Some of the most important nutrients right now are vitamins A, C and E. This winter warming Thai curry combines butternut squash, which provides beta carotene that converts to vitamin A in the body, coconut milk which is a source of vitamin E and lime wedges which provide much needed vitamin C. The recipe also uses ingredients that support optimal gut health; onions and chickpeas are both prebiotics whilst fish sauce and soy sauce, which are fermented foods, provide positive bacteria to help maintain a balanced microbiome, an important part of your immune system.
Here the ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 250g chopped butternut squash (fresh or frozen)
- 50g Thai massaman curry paste
- ½ x 400g tin chickpeas
- 200ml coconut milk from a tin
- ¼ tsp fish sauce
- ½ tsp soy sauce
- To Serve:
- Lime wedges
- Fresh Mint
Method:
- Heat the oil in a pan with a lid
- Add the onions and sauté until soft
- Add all other ingredients and stir then bring to a simmer and pop the lid on
- Cook until the butternut squash is soft and cooked through
- Serve with lime wedges and fresh mint
